Soooooo delicious! Grab your ingredients, a blender, and muffin or popover pan and get crackin!
2 eggs
1 cup whole milk (or 2% if you don’t have whole)
5 TBS butter melted then cooled (separate 1 tbs to add to mixed ingredients)
1 cup flour
1/4 tsp salt
1/2 tsp vanilla
2 tbs cinnamon (1/2 tbs goes into mix)
1/2 cup granulated sugar
1) mix the eggs, milk, and 1 tbs butter in a blender
2) add the flour, salt, vanilla, and cinnamon to the blender and mix
3) preheat your oven to 450 and let your batter sit for a few for better texture
4) put your muffin pan in oven for a few minutes to heat up then take out and spray with cooking oil spray
5) fill the cups up halfway
6) bake for 15 minutes at 450 and do not open the oven at all during this time. Turn temperature down to 350 after the first 15 and cook an additional 15 or until slightly browned but not too crunchy looking 😉
7) pour 1/2 cup sugar and 1.5tbs cinnamon in shallow dish or plate and stir
8) take popovers out of oven and place on wire rack to cool slightly. Pierce the bottom of the popover to let steam escape.
9) brush too of popovers with the rest of your delicious, melty butter and
then roll in cinnamon sugar mixture.
10) enjooooooy!!!
